Abstract

Studies carried out in 1989 on the efficacy of rendering processes in the Netherlands in the elimination of microbiological agents, showed that spores of Clostridium were present in 12,2% of the samples taken directly after autoclaving. C.perfringens was detected in less than 2% of the samples. In samples of final products no Salmonella was detected and the number of Enterobacteriaceae was <10 cfu/gram in all samples. In samples of dust, taken from the processing halls, higher numbers of Enterobacteriaceae and presence of Salmonella were determined incidentally.
